Chocolate volcano

Made molten lava choc cake for Val on her birthday. It was my very first attempt. Here's what panned out...

Don't be deceived though... it was surprisingly easy to make and very yummy-licious! Yay! If I can keep the consistency, we won't have to spend 20 bucks for one at Chilis whenever we have a craving for it.

    Thanks Sharon! Here you go:-

    Ing:
    200g cooking chocolate
    200g butter
    100g of fine sugar (I've already reduced this but if you have a sweet tooth, go for more)
    3 heaped tbsps self-raising flour
    4 whole eggs & 4 egg yolks (lightly beaten)
    8 X 2" ramekins
    extra butter for buttering the ramekins and lightly coat with flour.

    Method:
    1. Melt chocolate and butter (I did this in a bowl over a saucepan of boiling water).
    2. Mix in sugar and stir well.
    3. Stir in sifted flour bit by bit. Fold well.
    4. Leave mixture to cool (about 20 mins) before adding in the egg mixture.
    5. Divide equally into the 2" molds.
    6. Chill for at least ½ hr.
    7. Pre heat oven to 200deg C and bake for 10 min or until cakes rise about ½ inch. Remove and serve upside-down with ice cream.

    N.B. Over-baking will produce a cupcake without the lava.
